Made in the desert.
Rooted in place.
Every spirit we produce starts with a question about place. What does this landscape taste like? What did people drink here before the industry standardized everything? What can we make that requires being here to make it?
The answers change. The approach doesn't.
Texas Straight Wheated Bourbon — 8 Year Wheated Bourbon · 8 Year · 55% ABV Eight years in barrel under a West Texas sky. The altitude and the daily temperature swing here work wood and spirit in ways a humid rickhouse can't. Full, deep, and long on the finish. Available for retail purchase and at the bar
Texas Straight Wheated Bourbon — 8 Year
Wheated Bourbon · 8 Year · 55% ABV
Stone fruit, caramelized sugar, toasted grain, and oak.
Built on a custom mashbill that leans into an older tradition of wheated whiskey — lower in corn, high in wheat and malted barley, closer to the bourbons of the mid-20th century. On the Marfa plateau, 4,700 feet up, the barrels mature gracefully: the spirit keeps its nuance while it gains depth and concentration. It's pretty wonderful.

Sotol · 45% ABV
Earthy, herbaceous, and bright.
An artisanal spirit made from 100% sotol, blending three distinct varieties: Dasylirion berlandieri (Coahuila), Dasylirion leiophyllum (Central Chihuahua), and Dasylirion wheeleri (Southern Chihuahua). Built to shine in cocktails, it remains balanced, expressive, and satisfying as a neat pour.

Desert Rose Barrel-Rested Sotol · 40% ABV A softer, more aromatic expression of our desert spirit. Floral and approachable without losing the mineral quality that defines the category. Available for retail purchase
Barrel-Rested Sotol · 40% ABV
Hints of dried fruit, soft tannin, and the faint memory of red wine.
The Rose begins as our Chihuahuan Desert Sotol, then rests for a year in heavily used, nearly neutral Texas Tempranillo wine barrels. The process softens and matures the spirit without overpowering it — an elegant, desert-driven, sotol-based delight.

Pure Single Rum Single Rum · 40% ABV Made with molasses from the last sugar cane mill in South Texas. Unaged, uncut, and direct. One of those spirits that tastes simple until you understand how hard it is to make it that way. Available for retail purchase and at the bar
Single Rum · 40% ABV
Layers of tropical fruit, overripe banana, mango, and a rich natural funk.
Distilled from molasses sourced from the last sugarcane processing facility in Texas, located just south of Kingsville. Rum Reposado Aged Single Rum · 40% ABV Rested and structured. More warmth, more complexity. The workhorse of the rum side of the bar program — built into everything from the Daiquiri blend to the Laguna Madre Highball. Available for retail purchase and at the bar
Aged Single Rum · 40% ABV
Rich, nuanced, and elegant.
Our Pure Single Rum spends two years resting in custom, gently charred American white oak barrels. We source slow-growth northern oak from Minnesota and Wisconsin, where shorter growing seasons produce tighter grain and denser growth rings — allowing the spirit deeper interaction with the wood itself. The staves are naturally seasoned in the open air for a minimum of two years before undergoing a long, gentle toast more reminiscent of fine wine cooperage than traditional whiskey barrels.

Vodka · 40% ABV
Clean and crisp, with a soft, polished finish.
We make it clean and crisp to be useful behind the bar. Proofed with the naturally mineralized waters of the volcanic high desert plateau surrounding Marfa, and charcoal filtered for a full 24 hours, it finishes soft and polished. It's a shining staple in cold martinis and simple vodka sodas — and smooth enough to enjoy on its own.
